Barossa Bar and Grill Delivers To Your Doorstep! At Vivocity, we are at Barossa Bar and Grill, where the entire aesthetic reflects elements of an old-school steakhouse and bar. This was the aesthetic the establishment wanted to go for, with the desire to distinguish it from the other restaurant located in the Esplanade as an upscale, more established steakhouse and grill. It’s prevalent when you walk into the restaurant: the dry aging storage area allows you to see the different cuts of Australian beef being dry-aged to make the tender meats that are available for diners.

These different cuts of meat are then worked over the josper grill that gives Barossa Bar and Grill their name, and each of the differing meat dishes are spectacularly grilled to perfection. A highlight, though, has to be the Locally Farmed Barramundi Fish “Pappillote”, which is marinated with lemon zest and olive oil, wrapped in parchment paper and foil and baked to perfection before being finished up over the josper grill, ensuring a perfect skin and soft yet firm flesh, thanks to it being cooked in the marinade and it’s own juices. This is the work of the executive Chef, Chef Derrick Tan of CrEATive Eateries. “The foil will withstand the temperature of the josper grill, which can reach up to 300 degrees, due to the smoke and charcoal,” says Chef Tan. “So the foil helps the fish withstand the heat and the marinade will help cook the fish. It results on a delicate, light flavour that shows the freshness of the fish and the sea.” The fish itself is from local fish farm Ah Hua Kelong, which speaks to the restaurant’s commitment to sustainability. This goes the same for the seafood, all which are locally farmed. The beef and the different cuts are all from Australia, which is their commitment towards quality. The restaurant is named after the Barossa Valley, a region in Australia that’s known for great wine as well as great food, and as such, the wine choices available at the restaurant are sublime. Restaurant and Bar Manager Edward is helpful in the different wine pairings that work with the dishes, and is conscious not just to the type of meats to pair with the wines, but also the type of sauces that go along with the meats, all which are made in house.

“ We want the overall dining experience to be something similar to what you can experience in Australia, at affordable rates,” says Mr . “ Since Barossa Bar and Grill is named after the valley, we want the pairings to have a marriage of flavours that complement each other,” says Chef Tan.” We emphasize heavily on josper grill cooking, to attain the intense smoky flavours and the heat grill on the dishes.”
