Riviera Forlino's Dessert Flights of Fancy
From Riviera Forlino comes a new 4-course Plated Dessert Flight!
The brainchild of Executive Pastry Chef Nicolas Vergnole, the Dessert Flight is masterfully conceptualised by the team to incorporate a mix of flavours for the different dessert plates. The refreshing citrus flavours of the show-stopping Rivera Vacherin, thanks to the ricotta di pecora gelato using ricotta made in house, Sicilian Pistachio Chantilly, and Amalfi lemon gel. The Caraibe 66% Dark Chocolate Cremeux, made with Glenfiddich 15 Year Old Whisky, and paired with the the silky flavours of the salted caramel ice cream. For those looking for a more natural, fruity flavour in their dessert, paired with a simple, clean flavour, there is the Les Figues de Provence. Using seasonal Soilles figs from France, and surrounded with a goat milk and honey cloud, along with an almond crumble. For those looking for floral, tart flavours, the Orchard Citrus Sphere, made using the ruby grapefruit terrine, vanilla ganache, Codigo Rosa 1530 Tequila Granite and topped with a light hibiscus gel.
All four desserts are available to pair with the exclusive batch of cocktails from Gudsht cocktails, with two flavours exclusively available at Riviera Forlino.
