With falafel balls (chickpeas mashed and oven-baked)m Chef David Ting creates an exotic rendition of Mediterranean wrap with olives, beetroot, kidney beans, feta cheese and bell peppers, invoking a sense of picnicking in an Israeli forest. For a tortilla wrap, fold slices of deli ham into compact quarters then layer them with tomato, cucumber and lettuce in the centre of wholewheat flatbread. Onions, caramelised till its natural sugars are brought forth, adds a sweetness which counters the saltiness in the ham. For something comforting, try the egg mayo sanwich on dark malt loaf. Not only are the mashed hard-boiled eggs cheerily yellow, soft, creamy and heartily-portioned, the black malt shell with a hint of ash, vanilla, caramel and nuts provide a toothsome crunch, promoting you to munch your way from one end of the other happily with through abandon.
