For the first step of making this wine, corvina Veronese, corvinone, rondinella and a small amount of cabernet sauvignon grapes from selected vineyards in the Classico area of Veneto spend up to five months drying out in ventilated rooms. After a slow fermentation, which lasts until the following spring, the wine is then refined in large oak casks for a further six months. For all the hard work, you get a deep red wine with lush dark cherry and berry flavours.
