Located in Savona, on the northwestern coast of Italy, Molo Ristorante features traditional Ligurian dishes, with modern elements adopted from other countries. The sea provides seafood, which the restaurant presents in the form of spaghetti with sea urchin, bottarga and anchovies. The mountains supply olives, which are made into pesto along with ingredients such as basil, pine nuts, parmiggiano, pecorino, salt, and garlic. This pesto is featured in pasta dishes such as trofie, a traditional Ligurian pasta. Liguria is a producer of wines, such as a 2015 Vermentino from Terre Bianche, a vineyard dating back to 1870, whose name means 'white soil'.
