Gruyère Choux Puff, Yuzu Parfait and Exotic Fruits Coulis

Gruyère Choux Puff, Yuzu Parfait and Exotic Fruits Coulis Ingredients
150ml water
100ml milk
100g butter
3g sugar
3g salt
150g flour
6 egg yolks
80g gruyère cheese, shredded and divided
Sable, yuzu parfait, exotic fruits coulis and chocolate disc, for serving
White chocolate shavings, for garnishing
 
Preparation

Heat 150ml water, milk, butter, sugar and salt to a boil in a saucepan. Add in the flour and whisk well. Add in the egg yolks one by one and whisk well. Add in 50g shredded gruyère cheese and cook until cheese has melted. Pour the = gruyère cheese mixture into a piping bag with a nozzle attached and pipe the mixture onto parchment-lined baking tray. Coat each choux puff with the remaining shredded gruyère cheese and bake in a preheated oven at 220°C until the choux puffs are golden browned.
 
Place the sable onto each serving plate and top with the yuzu parfait and exotic fruits coulis. Place the chocolate disc on top of the exotic fruits coulis and top with the gruyère choux puff. Garnish with white chocolate shavings.
