Oven-baked Endives With Chicken Mousse

Oven-baked Endives With Chicken Mousse Ingredients
1 chicken fillet (about 150g)
100ml cream
1 whole egg
½ tbsp chopped black truffles
Salt and freshly ground black pepper, to taste
4 endives, sous vide at 85°C for 2 hours
Butter, for pan-searing
Chicken jus, for drizzling
Chervil, for garnishing
 
Preparation
Place the chicken fillet, cream, whole egg and chopped black truffles into a food processor and pulse until smooth. Season with salt and freshly ground black pepper. Place the chicken mousse into each sous vide endives. Set aside.
 
Heat the butter in a frying pan and pan-sear the stuffed endives on all sides until browned. Bake the pan-fried stuffed endives in a preheated oven at 150°C for about 12 minutes. Remove baked endives with chicken mousse from the oven and cut into desired shape. Place the oven-baked endives with chicken mousse onto each serving plate and add a drizzle of the chicken jus. Garnish with chervil.
