Red Dates & Dried Longan Cake Ingredients
310g flour
8g baking powder
Cinnamon powder and nutmeg powder, to taste
265g butter
133g brown sugar
133g white sugar
24g trimoline
236g whole eggs, lightly beaten
23ml milk
10ml vanilla extract
185g red dates, soaked and finely chopped
115g dried longans, soaked and finely chopped
85g pine nuts, roasted
Whole red dates, whole dried longans and roasted pine nuts, for decoration
 
Preparation
Sieve the flour, baking powder, cinnamon powder and nutmeg powder into a mixing bowl and set aside.
 
Beat the butter, brown sugar, white sugar and trimoline in an electric mixer until creamy.
 
Add in the whole eggs little by little, ensuring each addition is well-incorporated. Add in the sieved flour mixture and beat well.
 
Add in the milk, vanilla extract, chopped red dates, chopped dried longans and roasted pine nuts and beat well.
 
Pour the batter into a baking mould and bake in a pre-heated oven at 180˚C for about 40 minutes. Check the doneness of the cake by inserting a metal skewer into the centre of the cake. The metal skewer should come out clean when the cake is cooked.
 
Remove the cake from the oven and set aside to cool on a wire rack. Once cooled, decorate the cake with the red dates, dried longans and roasted pine nuts.
 
Makes 1 cake
