Chickpea With Duo Of East Meets West Chicken sausage Ingredients
4 tbsp olive oil
2 garlic cloves, peeled and chopped
1 onion, peeled and chopped
½ (each) carrot and leek, chopped
300g waxed chicken sausages, sliced
200g smoked spicy chicken sausages, cubed
900ml chicken stock
240g chickpeas, rinsed and drained
1 bay leaf
Salt and freshly cracked black pepper,
to taste
Parsley, for garnishing
 
Preparation
Heat the olive oil in a cooking pot over medium-high heat. Add in the chopped garlic, chopped onion, chopped carrot and leek, and then sweat until fragrant. Add in the sliced waxed chicken sausages and cook until sausages starts to brown. Add in the chicken stock and bay leaf and simmer until the liquid is reduced by half, skimming the surface to remove scum that arises to the surface. Add in the chickpeas and simmer for about 5 minutes. Season to taste with salt and freshly cracked black pepper. Ladle the chickenpea with chicken sausage into each serving bowl and garnish with parsley.
