Turkish Welcome At Royal Plaza on Scotts Carousel from Royal Plaza on Scotts is currently playing host to the best of Turkish cuisine, where diners can taste the authentic flavours from Turkey. Presented by two young and talented Turkish guest chefs from Allium Villas Resort, Chef Selin Yılmaz Tümsek and Chef Murat Uyanık, both chefs are here to showcase their cuisine to Singaporeans and hotel guests at Royal Plaza on Scotts. 
 
Both chefs are established in their field as highly experienced for what they do. Sous Chef Selin is 28 years old this year and one of the best in her field. She has honed her culinary skills at popular establishments, specialising in European and Turkish cuisine. Chef de Partie, Murat Uyanık, is a rising star amongst the young chefs. He is a versatile chef who can whip up traditional dishes, yet he also enjoys innovating and often brings a twist to the table.
 
 We ask these chefs a few questions that discusses Turkish cuisine, and about what they hope to achieve on this trip to Singapore. 
 
 Tell us a little more about Turkish cuisine and what defines it.
 
Turkish cuisine has origins from the heritage of Ottoman cuisine. One can find influences from Central Asian, Middle Eastern and Mediterranean. Yogurt is one of the common ingredients that traditional Turkish cuisine uses, which comes from Central Asia.  The Turkish cuisine prefers light use of spices. Rice is also more commonly used than bulgur. Fish and vegetables also frequent Turkish dishes as fresh produce is easily available from the country.
 
 
What are some of the highlights of the food that you and your team are presenting during this promotion?
 
Some of the highlights are Pastirmali Hummus, that is a perfect match with Kuzu Tandir (Slow-baked marinated lamb leg in own jus for 6 hours). This is the signature dish by the Turkish guest chefs. The chefs use a slow baking process to retain the tenderness and moisture of the meat. The Pastirmali Hummus has been specially concocted to adjust its acidity so that it goes perfectly with the lamb leg.
 
Besides this, Mucver (Zucchini Fritters that are served with Mint Yoghurt) is one of the hot appetisers that should not be missed. This is a nutritious and tasty Turkish dish, which contains high fibre from the vegetables and protein from cheese and yoghurt that helps in digestion.

 
 How has the reception been for the food here so far?
 
We have been receiving positive feedback from Carousel’s diners. Although some guests come in as newbies to Turkish cuisine or not fans of Turkish food, they were enticed by the presentation and gave Turkish dishes a try. Eventually they were pleasantly surprised as Turkish cuisine turned out to be very flavourful and appetising, with the use of rustic spices.
 
 
 Have there been any adjustments made to the Turkish food served to adjust to the palates of Singaporeans?

 
Yes, Turkish desserts are known to be very sweet. To provide Singaporean guests with healthier choices, we work on the desserts menu to make adjustments. We’ve ensured that the authenticity of the cuisine is not compromised as the robust flavours of ingredients still come through.
 

 What do you hope that diners understand when eating Turkish food?
 
The choice of ingredients used in Turkish cuisine may not be as wide compared to other cuisines but the quality of the dishes is determined by the culinary skills and authentic spices that are used to bring out the authenticity.
