Colheitas’s Port & Brasserie Gavroche: Portuguese Wine Pairings Barao de Vilar White Colheita Port 1989                      $160

It has a bright gold colour with a fabulous aroma of liquorish, light spice, dried fruits, figs and honey. Silky smooth, complex and well-balanced with a good acidity to balance the richness and sweetness of the wine. The finale is long and extremely fresh. We chose this beautiful Barao de Vilar White Port for its silky character to pair with the smooth texture and savoury, creamy richness of the Chef Frédéric Colin’sTerrine of Duck Liver.  The finale is long and extremely fresh. It is because of these characteristics that it is paired with the terrine of Perigord duck liver with toasted country bread. The silky texture of the port goes perfectly with the smooth texture and savoury, creamy richness of the terrine of duck liver.
