Yes, that’s right. For obvious reasons, no one would even think that the exoskeleton of that sweet, firm meat in your shrimp cocktail would actually be able to preserve anything. But, we have been enlightened! A team of qualified researchers made up of microbiologists, wine producers and analytical chemists are being led by Manuel Coimbra at the University of Aveiro, in Portugal. This SO2 alternative could potentially aide the fight in protecting our environment.
