René Redzepi Plans to Close Noma and Reopen It as an Urban Farm Taking the next stop in his culinary adventures, René Redzepi plans to close down Noma after New Year’s Eve 2016 and reopen in 2017 with a new location and new menu. The new location will include a farm and the new menu will be transformed into a seasonal menu. Mr Redzepi’s desire is to constantly challenge himself and push the boundaries of Noma, he intends to put a greenhouse on the roof and bring in fresh soil. Aside from his ambitious plans, Mr Redzepi relocates his staff to different places to see what happens when the Noma approach is applied to ingredients in different parts of the world. He also has his young cook participate in a cook off Noma hold every Saturday in their kitchen. This constant need for change has allowed Mr Redzepi to take Noma far.
