Singapore-based chef Frederic Colin to open new restaurant in Sydney Chef Frederic Colin, owner of Brasserie Gavroche in Singapore, plans to open a restaurant in Sydney. The new restaurant, which will be situated in Chippendale’s Kensington Street, will also carry Gavroche moniker, and will be serving some of Chef Colin’s signature dishes from his Singapore outlet.
