Grand Hyatt Singapore Closing Down for Last Phase Of Operations, Teases Collaboration Ahead with Chef Sergio Herman in 2023 Grand Hyatt Singapore has revealed exciting news that will be affecting the operations side of the hotel: from September 19th onwards, the hotel will cease operations and close down.

Lest you believe this as devastating news, fret not: this is merely temporary. The  hotel is merely shuttering down so that their final, and in effect most extensive part of their renovations, can take effect. The hotel has been experiencing small phases of renovations for the last few months, and this latest announcement means that the final set of works will be in effect. The hotel is slated to reopen in the first quarter of 2023, with the works expected to finish in about four months. 

So what kind of Grand Hyatt Singapore will we be expecting to see in 2023? To start off, the hotel has teased an exciting collaboration with acclaimed Dutch chef-restaurateur Sergio Herman for a new landmark restaurant in the Grand Hyatt Singapore.

It's the first of its kind for the Hyatt Group in general, and definitely the first for Chef Herman's foray into Singapore and the Asia-Pacific region. In an announcement held yesterday in Tai Seng, the man himself took to the stage to announce his upcoming venture. Introducing him was Mr Andreas Stalder, Senior Vice President of Food and Beverage Operations and product development for Hyatt Hotels Corporation,  who beamed his likeness over via Zoom to help introduce the Hyatt brand and Chef Herman's plans for the hotel. The two had met when Mr Stalder had tried the food at one of Chef Herman's many food establishments and have become fast friends ever since, channeling that comraderie into the collaboration announced. 

“When we first met with Sergio in 2017, we instantly recognised that we share a common vision to forge a dynamic new style of hospitality that will better serve what our guests are looking for today and for the future,” says Mr Stalder.



Set to open in the second quarter of 2023, the restaurant will take over the space of mezza9 in the Grand Hyatt Singapore, and will be Chef Sergio’s debut in Asia after an illustrious career in Europe that has seen many of his innovative and unique restaurants earning Michelin stars. It also marks a milestone in Hyatt’s roadmap as a global lifestyle and hospitality brand. While Chef Herman's plans for the restaurant concept in general are still up in the air, members of the media were reassured to hear that more plans would be coming in soon, and will hopefully tape into the uniquely Singaporean experience of eating out for dinner more often than cooking a full meal at home. The event culminated in members of the media sampling 5 tasting meal portions of what would be expected to come in from Chef Herman and the rest of the Grand Hyatt team. 

It's all definitely very exciting news, and we'll be sure to announce the news of just what Chef Herman, and effectively the rest of the Grand Hyatt team, would be up to in 2023!
