Nights of Marrakech at SO/ Singapore Boutique Hotel SO/ Singapore is building that wanderlust in you when you dine in at Xperience Restaurant, which transforms itself into a Moroccan paradise for lunch and dinner this September.

Working with Walima, both parties present  'Marrakech at SO/', a celebration of Moroccan cuisine and culture. With the help of Walima’s very own talented Safia Aboutikab with SO/ Singapore Executive Culinary Designer, the feast cultivated is so reminiscent of the Moroccan “diffa” – feast and uses ingredients that are readily available. Created by Chef Aboutikab and helped by Chef Hong and his culinary team, the sumptuous and authentic Moroccan cuisine is expertly made with great use of spices and herbs. Chef Hong admits that he had never had anything like Moroccan cuisine before, so learning it was a challenge, but every element of learning from Chef Aboutikab was a joy.



It helps that Chef Aboutikab’s authentic and beloved dishes take time and technique to master, so every element is authentic, and warm. From the preserving and pickling of certain produce to the slow-braising of meat (Chef Hong describes it as at least 4 hours of slow-braising) and vegetables, every step has been meticulously handled with love, as though you’ve stepped into a traditional Moroccan household. If you are looking for highlights of the feast, look for the main courses of couscous, served in a tagine, with beef piled on top with each scoop of couscous with fava beans, Brussel sprouts, pumpkin and sweet potatoes. The beef may seem soft, but each bite lends itself so much firmness you’ll find yourself reaching for another scoop soon after! Another highlight? The lamb shank that is stewed with dried apricots and plums, as well as walnuts, lending the sweet flavours of the fruit into the stew and the meat.



To pair with the food, exclusively curated cocktails infused with spices like coriander seeds, turmeric powder, and anise, and bodied by base alcohols like gin are available, with four to choose from. End off the meal with the pastries and tea set, with Moroccan mint tea a must, served in beautifully made cups with gold detailing.
