Camaca Singapore: A Refuge for Those Looking for Sugar-Free Desserts Sugar free gelato? Is that even possible? Well, the people behind Camaca Singapore believe that it is, and their café , located in King Albert’s Park, is testament to the fact that healthier desserts are possible.

The way they move and distribute their signature gelato is aesthetically adorable: kept in giant plastic macaron capsules, the gelato is kept in such a way where customers can see the flavours that they want while still protecting the quality, texture and hygiene of the gelato. “We put the gelato inside the capsule and we pop it into our custom-made machine, which squeezes the gelato out when it’s time to serve,” explains Joel Lee, Business Development Manager at Camaca. “One capsule is equal to one serving.” He beams. “Each capsule is one time use, and is biodegradable. The magic of this is that anyone can use the machine, even a little girl, and we let our guests use the machine to get the best experience.”

The machine they use at Camaca Singapore is exclusive only to the Taiwanese-based franchise, and everything else from gelato, decorations and everything else is done in- house. The team behind Camaca Singapore do their best to retain the prinicples of  Camaca. The entire premise behind Camaca was borne from a simple idea by Taiwanese TCM professor, Leo Li, who wanted to bring to the masses healthier food that's safe to consume, while not compromising on its taste. This includes desserts, and all the desserts, be it the chocolate, gelato and the cakes are 95% sugar free.

Mr Lee’s views of how the masses are enjoying the desserts are optimistic. “ We actually expected more tourists rather than locals joining us at Camaca. Singaporeans, when they hear the phrase ‘sugar-free’, see it with scepticism. We’ve educated them one by one using the science of what we do in Camaca Singapore, namely the use of maliltol as a sugar-substitute. And one by one, we’ve won them over.”

The team uses only premium ingredients from all over, with recipes coming from Taiwan, but the Singapore team is always experimenting with different flavours. “ We’re always innovating for new ideas, and currently, we’re working with something interesting: chilli walnut!” Mr Lee laughs.
