Ingredients

"Chicken Tikka
200g boneless chicken cubes
20g chilli paste
10g garlic paste
3g garam masala powder
50ml yoghurt
10ml mustard oil
salt, to taste

Masala
2g cumin seeds
50g onions, chopped
75g tomatoes, chopped
10g garlic paste
10g ginger, chopped
5g green chili, chopped
2g turmeric powder
2g red chili powder
2g garam masala powder
20g corriander leaves, chopped
1g kasuri methi powder
2g freshly ground pepper
20ml oil
1 lemon wedge
4 pcs potato baskets

Garnish
some dry mint powder
a few drops mint-flavoured oil
a few drops chili oil"



Preparation

"1. Marinate the chicken cubes in a mixture of chili paste, salt, garlic paste, mustard oil, garam masala powder and yoghurt.

2. Char-grill the chicken cubes.

3. Heat some oil in a pan and crackle the cumin seeds. Add onions, ginger, garlic and green chilies. Add turmeric powder, red chili powder and tomatoes.

4. Mix in the chicken cubes and corriander leaves, and sprinkle in kasuri methi powder and garam masala. Finish with lemon juice and freshly ground pepper.

5. Serve in potato baskets and place on a serving plate.

6. Sprinkle the dry mint powder and add a few drops mint and chilli oils to garnish."
